Main: That chick’s got balls

For the chicken:

• 20 free range chicken drumsticks, skinned and cleaned
• 1 cup HP sauce
• half cup canned tomato
• 5 teaspoons English mustard
• 2.5 teaspoons ginger powder
• 5 tablespoons Mrs Balls Chutney
• 2 tablespoons sweet chilli sauce
• 2.5 onions finely chopped
• 2.5 tablespoons olive oil

1. Marinate Chicken drumsticks over-night
2. Preheat oven to 205’C
3. Bake for 30 minutes (25 min through)

For the garden vegetables:

·         1 punnet green marrow

·         1 punnet baby carrots

·         1 pack baby potatoes

·         Olive oil

·         Salt and pepper

1. Rinse vegetables and pat dry
2. Arrange potatoes and carrots in an oven tray
3. Top with olive oil
4. Sprinkle with salt and pepper
5. Add marrows after 15 minutes
6. Bake for ½ hour

For the cous cous:

·         3 cups dry cous cous

·         Salt

·         Boiling water

1.       Pour cous cous into a deep bowl

2.       Add a pinch of salt

3.       Pour boiling water over until slightly above level of cous cous

4.       Cover with plate / lid and leave aside for 10 minutes

For the sambals:

• 1/2 onion
• 2 tomatoes
• Lemon juice
• salt

1         Chop tomatoes and onions finely dress with lemon juice, mix and serve in small bowls
