Dessert:  Red Avalanche and Lava

For the Apple Crumble (makes 2):

• 4 Apples (green)
• 170g granulated sugar
• 170g butter
• 280g self raising flour
• 1.5 tspn cinnamon

1. Preheat oven to 180’ C
2. Mix the butter with the flour in a dry bowl using a fork or your hands until you have a texture like breadcrumbs. (This will take about 3 minutes.)
3. Add 2/3 of the sugar to the mixture and mix it all together with the fork
4. Peel the apples and cut each one into four parts. Cut out the core from each of the sections.  Slice the apple quarters to about six slices per quarter.
5. Put the apple slices into the oven dish. Add cinnamon evenly over apples.  Sprinkle the remaining sugar over.
6. Evenly spread the ‘crumble’ mixture over the sugared apples.

7.       Bake in middle of pre-heated oven at 180°C for 40 minutes.

8.       Leave it to cool for at least 15 minutes.

For the Rooibos Ice Cream:

·         1l Vanilla ice cream

·         2 cups rooibos tea (strong)

·         Cinnamon

 

1. Defrost 1l of vanilla ice cream
2. Add 2 cups black rooibos tea
3. Whisk together add cinnamon, beat and freeze

For the mint tea:

 

• Mint
• Boiling Water
• Honey

 

1. In a teapot add a bunch of fresh mint and boiled water
2. Serve in shot glasses with honey
