Tiramisu Cheesecake with Coffee Glaze and Raspberry Topping by Bibi Fathima Sirkhot

Cooking with Bibi shared with us this.  A light and full flavoured hinted coffee cheesecake layered with soaked sponged fingers and topped with a coffee glaze and tart raspberry.

Tiramisu by Cooking with Bibi



For the Tiramisu Cheesecake you will need:

300 ml cream (whipped Stiffed)
1 tubs Mascarpone cheese

1 ½ Tub Cream Cheese
200 g Icing Sugar
3 Tbsp. Gelatin mixed with a little boiling water
1 tsp. Coffee Essence

1 tsp. Vanilla Essence
Nescafe Coffee Granules for dusting
1 Pack Boudoir Finger Biscuits

20 cm Cheesecake, springform pan

Strong Black Coffee

Whole Raspberry

Whip cream until stiff peaks
Fold in mascarpone, cream cheese and icing sugar, mix well until combined
Add in coffee essence αη∂ mix well
Add in Gelatin mixture αη∂ smooth through using a hand mixture
Dip sponge Fingers into prepared hot coffee and layer at the base

Cover with cheesecake filling

Add another layer of soaked sponge fingers

Followed by the remainder filling

Dust over granulated coffee and refrigerate overnight for best results

(the coffee granules will form a thick glaze by the morning)

Garnish with whole raspberries
