SANZAF GRADUATION SANZAF hosted their second annual graduates ceremony, in honor of the students on their bursary programme that have graduated in 2007. Alhumdulillah, 14 Graduates will join the real world of work, and 10 students have achieved 5+ disinctions at university level. The average mark of all the students was 63%. Well done. As we say in varsity 50% is a pass and 51% a distinction. Sanzaf is looking for sponsors for bursaries. They had an overwhelming response of applications and can’t cater for all the requests. NANIMA’S REMEDY

Tomato

Tomato provides the needed anti-oxidants. These anti-oxidants remove the free radicals which cause diseases like cancer. It also prevents heart attacks due to abundance of vitamin C and E. Tomato also contains lycopene which prevents bad cholesterol in the blood. Lycopene happens to prevent cancer of the mouth pharynx, esophagus, stomach, colon. It also reduces risk of pros-trate and cervical cancer. The presence of vitamin C in tomatoes helps it to fight diseases like asthma. Tomato is known to treat eczema. By drinking tomato juice everyday you can see the difference. To remove dark circles under your eyes make a paste by using 1 tsp tomato juice, 1/2 tsp lemon juice, a pinch of turmeric powder and a pinch of gram flour. Apply this paste under (not in) your eyes and keep it for 10 minutes. You will notice the difference with regular use.

Egypt the top of Africa Egypt retained their MTN Africa Cup of Nations crown in Accra on Sunday when Mohamed Aboutraika lifted the champions to a 1-0 win over Cameroon and a record sixth title. The Indomitable Lions were dominated throughout and, in the 77th minute, a blunder by captain Rigobert Song allowed Pharoah’s Mohamed Zidan to square the ball to Mohamed Aboutrika, who fired home from close range. Aboutrika hit the headlines during the African competition for revealing a T-shirt with “Sympathise with Gaza” emblazoned on it after scoring a goal, and the giant screens relayed live images of crowds of Gazans joining the party. The city of 16 million Egyptians celebrated, joined by hundreds of Palestinians who took to the streets and coffeeshops of Gaza City to join in the celebrations.

RECIPE

TOMATO BREDIE

INGREDIENTS:
1kg beef or mutton shoulder
2 tablespoons oil
1 tablespoon butter
2 teaspoons sea salt
half teaspoon freshly ground black pepper
2 onions — chopped
6 ripe red tomatoes
170g can tomato paste
1 teaspoon sugar
quarter teaspoon chili powder
half teaspoon paprika
3 cloves crushed garlic
1 teaspoon mixed herbs
1 and half cups water
1 chicken stock cube
3 potatoes — diced
1 tablespoon potato flour

METHOD 1,2, 3
Cube the meat. Heat the oil / butter mixture in a big, heavy-bottomed saucepan until the butter discolors. Add the meat in batches and stir-fry until brown. Remove each batch with a slotted spoon and keep aside. Season the browned meat with salt and pepper. Brown the onions in the remaining oil. When golden, soft and glazed, add the tomatoes, tomato paste, sugar, chili, paprika, garlic, herbs, water and stock cube. Bring to a slow simmering boil. Add the prepared meat. Simmer the bredie very slowly for 2 hours. Add the cubed potatoes and continue simmering for another half hour. Thicken the gravy with a little potato flour mixed with water. T he bredie improves with keeping. Prepare a day in advance and leave to mature in the refrigerator. Reheat and serve with fluffy steamed rice to which a handful of chopped parsley has been added.
