Inspiration: butter chicken is my bachoo’s favourite meal. I thought I would just add the butternut to add extra twist to it.
Tamatie Toast – needed to use baguette thought a beda vari bread with egg and thyme and lekker tamatie filling would be nice.
Tamatie Toast Ingredients
2 eggs
salt and pepper to taste
half can Pnp Chopped tomato
few sprigs thyme
half teaspoon sugar
few slices baguette
quarter cup milk
Butter for frying
Tamatie Toast Method
Braise tomatoes, thyme, salt and pepper in a pan and leave aside.
Break eggs and in a place and lightly beat with a fork. Add sugar, milk, salt, pepper and thyme.
Slice baguette in desired size. Heat pan on medium heat. Melt butter. Place baguette slices in egg mixture and coat baguettes on both side. Place coated baguettes in a frying plan. Once bottom side is golden brown turn and brown the other side.
Serve Toast with Tamatie Thyme filling.

Butternut Chicken Rice Ingredients
Spekko Rice
1 cup Spekko Long grain rice
2 cups boiling water
sprigs of thyme
salt to taste
optional 1 teaspoon vegetable stock
Spekko Rice Method
As per instructions on packet
Stove – Bring cooking water to the boil, add salt (optional) and Spekko rice. Cook uncovered for 15mins. Remove from heat and drain. Place Spekko rice in colander or sieve over boiling water and steam for 5 – 10mins.
Microwave – Place Spekko rice and boiling water in a microwave dish and cover with lid. Microwave on high (100%) for 15mins. Allow to stand for 5mins.
Butternut chicken Ingredients
1 leek sliced
2 chicken fillets cut in strips
half can Pnp Chopped tomatoes
sprigs of thyme
salt and pepper to taste
1 cup Pnp Plain yoghurt
1 butternut cubed
vegetable stock optional
Butternut Chicken Method
1. Heat pot and melt butter. Add sliced leeks and let braise until golden brown and translucent. Add salt, pepper and thyme. Add chicken and cook for 5 minutes. Add cubed butternut and simmer for 10 minutes until tender. Add Pnp canned tomatoes and braise for few minutes. Add yoghurt and simmer for 15 minutes
Serve Butternut chicken with Spekko Rice
