MAIN COURSE
Savoury rice with baked Chicken an crumbed potato wedges .
Chicken – 6 – 8 pieces
Salt and pepper
Bread crumbs
Dried parsely
Clean an wash chicken pieces – drain of water and pat dry with paper towel
Season with salt and pepper
Place crumbs in plate add seasoning and dried parsley mix
Pour about ½ cup olive oil in soup plate , coat chicken in oil then crumbs and place on baking sheet.
Bake in oven at 180 degrees for 1 hour
Potatoes
Peeland cut into wedges . wash and dry . season , coat in oil then crumb .
Place on baking sheet with chicken pieces.
RICE
1 cup Basmati rice
1 cup frozen peas and corn
½ cup snow peas
1 med onion chopped
1 carrot julliene
½ tsp ginger garlic paste
1 tsp chillie powder
¾ tsp turmeric
¾ tsp dhania jeero
¼ cup oil
Salt to taste
Boil rice till ¾ done
Sauté onion till light brown
Add spice and cook for 2 min
Add veg cook for 2 min
Add tomato cook till done , season
Add boiled rice – mix well and steam .
LEMON BUTTER SAUCE
60 g butter
60ml mayo
12,5 ml lemon juice
1 tsp dried parsley
Salt and pepper
Place all ingredients in heat proof bowl and micro for 1 ½ minutes.
