BUDGET SPEECH: Finance Minister Trevor A Manuel, will deliver the budget speech on February 20 2008. At 14:00. His speeches are always so funny and interesting. The one year he distributed basket of apples to signify a fruitful year. I wonder if this year he will distribute torches hopefully to lead us from the darkness into the light. GOODBYE LEE HAINES:Amazing how we get attached to stars. People are feeling like a family member has died. Lee Haines(Ashley Callie) will be missed. She was practically in 4 million homes daily. SABC 3 and the producers of Isidingo have decided not to recast actress Ashley Callie’s role in the soapie. Callie died on Friday following a head-on car collision in Johannesburg the week before. A memorial service for Callie will be held on Thursday at the Johannesburg Country Club, in Auckland Park.How, and when, Callie’s character will make her last appearance in Isidingo is not clear, and Pumla Hopa Producer of Isidingo said it will not be made public in order not to spoil the show’s plot. I wonder how Barker Haines will react when another child of his dies, the last time he almost killed himself.It would be very ironic if Cherel has something to do with it.
FATNESS VS FITNESS:Oprah’s nemesis!!! The world is obsessed with this. It amazes me at how socially unacceptable fatness has become. What worries me more is that a person can be stick thin twiggy,lethargic and anorexic and this is totally accepted. Both are two extremes. The focus is totally lost. People are obsessed about weight instead of health. It doesn’t mean if a person is thin, they are fit. If you are battling with weight, either fat or thin, focus on FITNESS. Clear your mind, sit still thinking about nothing for 10 minutes a day increasing as the days go, focus on you breathing , start moving, break a sweat, exercise 30 minutes a day(brisk walking, running) , eat fibre/oats for breakfast, drink 6 glasses of water, be grateful for what you have, think happy thoughts, focus on your strengths, not your weaknesses, eat healthy foods especially fruits and veggies and most importantly find balance.

Carrots
Carrots are very high in the antioxidant beta-carotene, also known as pro-vitamin A. Studies have shown that as we consume more of these antioxidants, they help to eliminate free radicals, which damage our cells and ultimately affect our health. Beta-carotene is converted in the body into the most usable form of vitamin A. It’s easier to digest than vitamin A in tablet form and is known to improve eyesight and promote beautiful skin. It helps to support the immune system and build strong bones, tissues and teeth, as well as assist in RNA synthesis and stimulate thyroid and adrenal function. Carrots also have melanin in them, which helps to protect the skin from sun damage and cancers such as melanoma.

Keep your car tyres properly inflated. Driving with under-inflated tyres can increase your fuel consumption, and therefore your emissions, by up to 5 percent.
Driving smoothly, with as little sudden acceleration or braking as possible, evens out fuel use
Shutting all the windows will make your car more aerodynamic, cutting the cost of a journey.
Even cars must go on diets now – Have a look inside your car. Empty unnecessary baggage in it. The heavier your car is, the more fuel it uses. So slim it down and save some money
Find a lift club or a public transport alternative. This will also solve the problem of sitting long hours grid locked in traffic. It is such a waste to see thousands of cars going from the same place and arriving at the same destination with one passenger in each car.
Walk or cycle to your destination if it is close by. Save fuel and burn calories and become fit.

Brownies (with Carrot and Spinach)
From the book Deceptively Delicious These brownies fool everyone! You won’t believe how scrumptious they are (or how good they are for you) until you make them yourself. Just don’t serve them warm-it’s not until they’re completely cool that the spinach flavor totally disappears.
INGREDIENTS:
Nonstick cooking spray
3 oz. semisweet or bittersweet chocolate
1/2 cup carrot puree (Peel, trim the ends and cut into 3-inch chunks.Steam for 10 to 12 minutes. In a food processor or blender for about 2 minutes, with a few teaspoons of water if needed for a smooth texture.)
1/2 cup spinach puree (No prep at all for baby spinach. For mature spinach, fold leaves in half lengthwise with the stem outside, then strip the stem off the leaf. Steam for 30 to 40 seconds, or cook in a skillet with 1 tablespoon of water for about 90 seconds, or just until wilted.In a food processor or blender for about 2 minutes, until smooth and creamy.
1/2 cup firmly packed light or dark brown sugar
1/4 cup unsweetened cocoa powder
2 Tbsp fat-free soft tub margarine spread
2 tsp. pure vanilla extract
2 large egg whites
3/4 cup oat flour or all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
METHOD 1,2, 3
Preheat the oven to 180 degrees celsius. Coat an 8″ x 8″ baking pan with cooking spray.
Melt the chocolate in a double boiler or over a very low flame.
In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine and vanilla and whisk until smooth and creamy, 1 to 2 minutes.
Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.
Pour the batter into the pan and bake 35 to 40 minutes. Cool completely in the pan before cutting into 12 bars.
